Black Bean and Quinoa Taquitos

So, my tooth is finally gone! I didn't think I'd ever be so happy to go to the dentist. I am now happily at home, with gauze in my numb mouth, but the jaw pain should be gone! Wahoo! It's likely that I won't be able to eat solid food for a day or so, but seriously, I'm just happy the whole 'tooth fiasco' is over with!

Last night, I was still able to eat solid foods, so I whipped up some taquitos. Yet another good finger food, and really easy. Enjoy!















Black bean, quinoa and veggie filling!















Taquitos ready to go in the oven.















Black Bean and Quinoa Taquitos
1 cup black beans, cooked
1/2 cup quinoa, cooked
1 cup mushrooms, finely minced
1 zucchini, chopped
4 serrano peppers, seeded and minced
1 poblano pepper, seeded and minced
1 Anaheim pepper, seeded and minced
1 habanero, seeded and minced (optional)
1/4 red onion, minced
5 cloves of garlic, minced
1 small can of sliced black olives, drained
chili powder
cumin
ground coriander
salt

corn tortillas (we used white corn)
toothpicks
guacamole
Green Chile Taco Sauce

Preheat oven to 375.

Heat a few tablespoons of water in a small skillet. Add the mushrooms, peppers and onion and cook for 15 minutes. Add the garlic and cook an additional 5 minutes. Drain any excess water.

Combine all ingredients in a large bowl and season to taste.

Layer filling in warmed corn tortillas and secure with a toothpick.

Bake 15-20 minutes or until tortillas crispy and golden brown.

I hope when the numbness wears off that my mouth isn't too painful. We get our first CSA box this weekend and I want to be able to enjoy some of it!

Thank you so much for posting a vegan taquito recipe. I've missed taquitos since going veg. They were a childhood favorite.

I love this combination- black beans, quinoa, and taquitos that are baked (I think they're often fried?). Wasn't it great to see the sun for a change after all of our rain?

Romina - Me too! Whew! Quinoa is amazing, I know many people out there have a special place in their heart for this wonder grain. I know I do. Mmmmm. Glad I could make you smile. :-)

The salad with the black beans and mango? I eye that one all the time, but have never seen mangoes come from anywhere remotely close to where I live, so I try to avoid them. If I knew how good a fresh mango was, I probably couldn't keep myself away. Like avocados, they will likely never grow anywhere near Missouri, but I get them anyway, at least when they come from the US.

Quinoa kicks are fun. Mmmm.

No problem. If you make these, I would try using yellow corn tortillas as opposed to white corn, and perhaps giving them a light spray with canola oil in a spray bottle.

I ate so many taquitos as a kid.

Alice - Gotta look at the bright side, and as far as personal comfort goes, I already feel many times better that I did before. My mouth is just really sensitive to solid foods.

They were pretty dang good.

Lisa - I love black beans and quinoa together, they were meant for each other. Taquitos and flautas are generally fried, but who needs to mess and all that grease?

I KNOW! I didn't think it would ever stop raining! And what a cool spring it has been, I'm looking forward to the hot weather. You know, lemonade, swimming pools, the kind of thing I'm used to in a Midwestern summer.
