Salsa Verde Enchiladas (How I Love Thee)

So first off, Chandelle, we LOVE you. We made her Salsa Verde Enchiladas for dinner last night, and this was the best thing we've made since I created the Fiesta Burrito - both Brett and I agreed. These enchiladas were absolutely fantastic. Her recipe originally called for seitan, but she, knowing that not everyone is very fond of seitan (like me), kindly offered up a bean suggestion as an alternative. I took her advice and used a combination of kidney and black beans, and halved the recipe since there are only the two of us. I may have also added an extra jalapeno and a habanera pepper to my salsa verde. :-)

My apartment smelled like a Mexican restaurant - truly authentic. When I smelled it, I knew it was going to be good. Brett and I stuffed ourselves with these, both wishing that we had more room in our bellies and more food because that's just how good these enchiladas were. We will be having these again very soon, I almost want to have them again tonight but I don't have all the stuff I would need.

Oh! And as if I haven't waxed on about these amazing and beautiful enchiladas enough (I get really weird about good Mexican food), both Brett and I agreed, this would be something you could serve omni's, as is, and they would probably like them a lot. Go a little further and serve these with some guacamole, shredded lettuce, diced tomatoes, vegan refried beans and rice, and your guests will think they've died and gone to a Mexican restaurant. You'll certainly score some points for authenticity and creativity.

Well, it's Spring Break at the university I work at, so I took today and tomorrow off to give myself a nice long weekend. I'm off to enjoy the weather and maybe try to come up with some good tasting Mexican food of my own!

These look really great! I am also a Mexican food fan...living near the Mexican border can do that to a girl. Now the only Mexican I eat is what I make myself...

I love me some enchiladas. Probably my favorite Mexican food. I hardly ever make them though because I get impatient waiting for them to bake. But I've discovered I'm more likely to bake entrees if I prep everything the night before...so I can pop it in the oven when I get home. I'll try these.

Shellyfish - I am officially jealous. I can't even think of the peppers and dried beans, OH AND authentic Mexican food and spice you have at your finger tips, I hope you take full advantage. I'm with you, now that I know how to make my own Mexican, I rarely go out for it.

Bianca - They are excellent and so versatile. Hehe. I usually just go do something else. I used to be an impatient cook, but have found that it's a good time to read a good article or something. Just don't forget about your food......

Vegan_Noodle - You should end the enchilada drought! I'm all for increased consumption of pretty much any type of Mexican food, though I pretty much live off the stuff, so am probably biased.

Don't discount it, we might be able to work something out. Being in the Midwest, I'm not TOO far from northern states like Minnesota and stuff. Not to mention, I have never been to Canada and have always wanted to. Keep me up to date on your plans.

It would be really, really cool. To be honest, I would be more likely to actually be able to meet you in some place in the northern US than I would in Germany. It would be a lot more feasible for me to actually go there. Haven't ever been to northern US either, aside from Illinois.

You might decide you like it here and want to stay - although I don't know, it IS the US. :-)

hooray! i've been anxiously waiting for your review. i don't know how often visitors actually MAKE the recipes i post, and i'm always so self-conscious that what tastes good to is horrible to someone else. ) so glad you enjoyed them!
